A calm way to make coffee. No machines. No rush.

A slow, stove-top brew that uses gentle heat and time to build depth. The coffee blooms, simmers, and settles into a fuller body with soft bitterness. Comforting, familiar, and especially grounding with milk.

You’ll need

1 –1.5 tsp Desk & Trail coffee

1 cup water

Milk (optional)

Channi / strainer

HOW TO BREW

1. Heat the Water
Heat water in a pan until it’s just about to boil.

2. Bloom the Coffee
Add coffee grounds and switch off the flame.
Cover with a lid and let the coffee bloom and open in the hot water.

3. Gentle Simmer
Place back on a low flame and let it gently simmer for
3 – 4 minutes. No stirring. No rushing.

4. Rest & Strain
Turn off the flame and let it rest for 1 minute.
Strain and add milk if you like.

A cloth-based pour that favors clarity and patience over heat. Hot water is added slowly, allowing the coffee to open and breathe. Light, aromatic, and meditative best enjoyed without rushing.

HOW TO BREW

1. Prepare the cloth
Place muslin cloth gently over a channi.

2. Add coffee evenly
Spread the grounds level and calm.

3. Pour slowly in circles
Use hot water. Pour gently not all at once.

4. Pause and breathe
Pause between pours. Let the coffee breathe.

5. Let the last drops pass
No pressing. Let it finish naturally. Add milk if you like.

LEARN A LITTLE MORE

A medium-coarse grind slows extraction and keeps the brew balanced. Simmer Brew™ uses time and gentle heat instead of pressure. A finer grind would extract too quickly and turn bitter. A coarser grind lets the coffee open gradually, staying smooth and forgiving. It’s the grind that allows you to pause, not panic.

• Keep the flame low. The coffee should never rush.
• Avoid stirring. Let the grounds settle naturally.
• Use freshly boiled water, then let it calm for a few seconds.
• Trust your senses aroma and color matter more than exact timing.
